Romaine lettuce/Grapefruit/Garlic Anchovy Dressing

Serves 4:
2 Red grapefruits
2tsp grapefruit or fresh lemon juice
5 Tsp. Pecan nuts, chopped but not finely(almonds go well too)
1 Head Romaine lettuce
3 anchovy fillets
¼c Olive oil
1 minced garlic clove
Salt and white pepper


Wash and peel the grape fruits so that you have the fruit fillet. Slice these into wedges without the pulp. Keep the extra juice for the dressing.

Wash the salad and spin dry. Toss it into small, bite size pieces.

Blend garlic and anchovies with grapefruit juice. Add the olive oil gradually until an emulsion is reached. Season with pepper and salt as desired. You have your dressing. Cheesy

Toss and turn the lettuce in the dressing and place on a dish as desired. Arrange/garnish (with) the grapefruit wedges nicely and toss the nuts in generously. Bon Appétit!

5 Cup Salad

1c mandarin oranges
1c miniture marshmallows
1c pinapple chunks
1c coconut
1c sour cream

Drain fruit. Mix all and chill over night.

My favorite fruit salad:

Several ounces lemon juice
2 almost-ripe bananas
1 Granny Smith apple
1 Red delicious apple (or other sweet red apple)
Large handful of fresh strawberries
1 small can mandarin oranges
Fresh pineapple (if not in season, can substitute lg can of Dole pineapple chunks - in own juice)
Half-dozen maraschino cherries
Shredded coconut - about 1/2 cup
chopped pecans - about 1/4 cup

Optional:
can of mixed fruit (my daughter and most people like this -- I don't LOL)
Large handful of sweet seedless grapes, washed

Easy preparation:
Pour lemon juice in a small bowl
Chop apples into bite sized pieces, dipping them a few at a time in lemon juice and coating them (this prevents turning brown), lift them out with a slotted spoon to let juice run off, and place them in a large bowl
Peel and slice bananas, coating them in lemon juice as well before adding to bowl
Chopped pineapple goes directly into the bowl -- don't add the juice
Slice strawberries and add them
Drain the mandarin oranges, add them to the bowl and discard the juice
If you want to use the canned mixed fruit, drain the juice and add it to the bowl
If you're adding grapes, I usually cut them in half before adding
Cut cherries in half and remove pits, add cherries to bowl
Stir everything up, then add coconut and pecans and stir again

This is so easy, it's not even a recipe, LOL. Just chill it and serve. It will keep in the fridge for a couple of days, but the bananas are not as nice-looking after 1 day. The trick is not to add extra liquid, because it WILL get too soggy and gross if you do. I make this every year at Thanksgiving, and also during the summer. It's a meal in itself if you want something light (and as long as acidic fruit doesn't bother your stomach). Enjoy! Smiley

Yummy Abs!!!

Another fruit salad I like is....

Bananas, apples, grapes, blue berries, black berries, Mandarin oranges, strawberries, and what every else fruit you might like, or what ever is in season.....now chop and slice all this fruit, and place in a BIG bowl...now dump in a can or two of Peach Pie Filling...mix and chill. this is really good!!!!

Thanks, Sunshine, I'll have to try that sometime! I like peaches in my fruit salad, but I don't like canned fruit cocktail, etc. and the fresh peaches are usually not a good texture to me in there.

This might do the trick. Thanks! (Sweeten it up too -- I think I'll pass on the coconut I usually use when I try that!)

I think you mean in a big bowl, Sunshine....at least initially.  Just a little more appetizing as a serving option. 

Though they'd end up in the other place eventually.

LOL.  If you just place it all straight into your bowel, you'd save your intestines an awful lot of work ... not to mention the fact that your visit to the ladies' powder room would smell more pleasant.   I think that Sunny is right to take  the direct route.

Well fine then!  Have it your way.  I just thought it would look nicer in a bowl, but practicality trumps presentation I suppose.

You are right.  I was approaching the issue from a clearly culturally derived mindset, without taking into account the point of view of another culture--E. coli, for example, or botulism or salmonella.  Thank you for setting me straight.

Roquette/Grilled Figs Salad

Serves 2

5 fresh blue figs
2 Tspn Olive oil/Extra virgin)
1tspn of grated orange  rind
2 bunches Roquette salad
2Tspn balsamic vinegar( old or young)
60 g parmesan cheese shavings
Sea salt and pepper

Wash the figs, slice them into halves. Brush them up with some olive oil and place them on a per-heated grill (with the sliced side down) for 3 good mnts. Remove them and let them cool.

Wash the salad and place it in a big bowl. Fold in the balsamic vinegar, olive oil, grated orange rind, a good pinch of salt and mix all well.  Place the salad on a platter and arrange the fig halves nicely on top of it. Sprinkle fresh grd pepper. Distribute the parmesan shavings generously onto the salad.

If prefered, garlic flavored croùtons may go well here too.

Fruit salad

Serves 2

1sour Appel
2kiwis
1banana
10 strawberries
200g Org. Sour cream
3Tbspn of fresh squeezed lemon juice
Stevia or honey

Wash all the fruits. Slice the apple into thin stripes. Peel and slice the kiwis, banana and halve the strawberries. Bring these all together in a bowl. Mix together honey/stevia with the lemon juice(sweeten as desired), pour this into the bowl and mix well.

Scoop the salad into serving  dishes and  pour some sour cream on each serving, if desired.

Strawberry Spinach Salad.

2  (6-ounce) packages fresh baby spinach
1  pint fresh strawberries, sliced
1/3 cup of crumbled blue cheese
1/3 cup candied pecans or almonds (heat nuts in a pan with sugar until the sugar melts, being very careful not to burn them, then allow to cool) or use plain unsweetened nuts of your choice.
Sesame-Poppy Seed Dressing
optional extra toppings: blueberries, chopped cooked bacon, chopped fresh broccoli, blanched sugar snap peas, sliced red onion

Sesame -Poppy Seed dressing:
1  cup  sugar
1/2  cup  cider vinegar
1  tablespoon  minced onion
1/2  teaspoon  Worcestershire sauce
1/4  teaspoon  salt
1  cup  vegetable oil
1/4  cup  sesame seeds, toasted
2  tablespoons  poppy seeds
Preparation
Pulse first 5 ingredients in a blender 2 or 3 times or until smooth. With blender running, add oil in a slow, steady stream; process until smooth. Stir in seeds; chill 24 hours
